Coca-Cola cake hits the spot
Chocolate and Coca-Cola and are two of my favorites, so what could be better than a combination? Although I am always on the lookout for outstanding cake recipes, winter presents a time when buttery warmth and rich icing are especially appreciated. If you are looking for low fat and calorie counts, then this is not the recipe for you. But if taste and texture are a must, this is a moist and gloriously fulfilling treat. I’ve had versions of this cake before — a relative’s well-intentioned but sugary mess among others — but it wasn’t until I ordered a wedge from Craker Barrel that inspiration to make my own version struck.
Moist chocolate cake gets texture from the cola and Bulgarian buttermilk, which adds a little more tartness than regular buttermilk. The icing is just as decadent with more cola and cream. Most recipes versions for this cake call for milk in the icing, but I added some heavy whipping cream I had on hand in its place.
A southern favorite, this sheet cake is sure to satisfy the sweet (and chocolate) tooth.
Coca-Cola Cake
1 cup Coca-Cola
1/2 cup canola oil
1 stick unsalted butter
6 tablespoons unsweetened cocoa powder
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup Bulgarian buttermilk
1 teaspoon baking solda
1 1/2 teaspoon vanilla
Preheat oven to 350 degrees.
Bring Coca-Cola, oil, butter and cocoa to a boil in a medium saucepan. Mix sugar, flour and salt; pour in boiling liquid and beat well. Add eggs, buttermilk, soda and vanilla; beat well. Pour into a greased and floured sheet cake pan. Bake for about 25 minutes.
Coca-Cola Icing
1 stick butter
4 tablespoons cocoa
6 tablespoons heavy whipping cream
3 tablespoons Coca-Cola
1 teaspoon vanilla
1 cup chopped and toasted pecans (optional)
4 cups confectioners’ sugar
1 tablespoon light corn syrup
Combine butter, cocoa and cream in saucepan. Heat until butter melts. Stir in remaining ingredients. Spread over cake while warm.

Thanks for this! I just made these for my super picky 4 yr old and he keeps asking for MORE more more! I did add a handful of carrot pulp left from juicing a bunch of carrots, figured I’d trick him into some veggie fiber AND it added color. Double bonus!
