April Fools’ Day brings out the fun in food. A challenge for me is finding the right balance of presentation and taste. After all, the joke will be on the cook if the food is gross but succeeds in hiding its true identity. One year I prepared a meatloaf cake “iced” with mashed potatoes and decorated with ketchup “cherry sauce.”

The comfort food in hiding did resemble a coconut or vanilla cake, and it was clever, but I thought it tasted a little like leftovers gone bad. The mashed potatoes dried on the outside, and I’m not one who likes to mix meat into mashed potatoes, even on the plate.

I was experimenting with a dessert and discovered that the cream and flour I was trying to whip into shape in the skillet had a texture like cream of wheat. Then I mashed a wooden spoon down and spread the dough. It looked and felt like mashed potatoes. All I needed to go with it was chocolate gravy, and I would have a delicious and picturesque April Fools’ food.

And the best part is, it was enjoyed by guests, not just admired for its ability to fool, but also to serve as a flavorful dessert.

Silky Mashed Potatoes

1 cup flour

1 cup whole milk

1 stick butter

1/2 cup sugar

8 ounces white chocolate

1 tablespoon Godiva white chocolate liquer

Pinch sea salt

In a large skillet over medium heat, combine flour, milk and butter. Stir with a wooden spoon until ingredients are blended. Add remaining ingredients and stir until combine. A few lumps will remain.

Chocolate Gravy

1/2 cup sugar

1 tablespoon butter

1 cup milk

2 tablespoons flour

4 tablespoons unsweetened cocoa powder

Mix all dry ingredients in a heavy saucepan, stirring with a whisk. Stir in milk. Cook over medium heat, stirring constantly until mixture begins to gently boil. Remove when thickened. Add butter and stir until completely melted.

Servings: 4.
