One doesn’t usually think of risotto and microwave in the same sentence, so I was a little skeptical of this offering from Zatarain’s. I served this on New Year’s day in place of my usual Hoppin’ John. The wild rice mixture included roasted chicken and marinated mushrooms in a creamy garlic sauce.

I was surprised at how true the texture was to homemade risotto. The balance of cream and garlic was perfect. I will always think of this New Orleans style of risotto when I make the dish. The ingredients have inspired me to make my own version for Mardi Gras.
